Special K Cottage Cheese Loaf

"I'm not sure where my mother got this recipe but it's been around since I was little. I love this recipe! Nice and easy to make and very tasty. (Of course I like to add more seasoning than it calls for)."

  • Mix all ingredients together and put into a shallow greased baking pan. (about 9x9").
  • Bake at 350 degrees for 45 minutes.

  1. I was raised on this recipe, ate it every Saturday. It brings back home cooking for a vegetarian family (not vegan).
     
  2. Your mother probably obtain this recipe from an Adventist. Its a fact that this dish was created by a Seventh-Day Adventist. Since we are mainly vegetarians, they had to find an alternative to meat so why not cereal since the founder of Kelloggs was Adventist himself. Enjoy the dish and the special meaning behind.
     
  3. This is a tried and true recipe. I've grown up with Special K Loaf and it is simply delicious!!! Instead of the sage, soy sauce, and oil, I used Lipton onion mix and melted low fat butter.
     
  4. Love this and have eaten since a child. My adult boys love it even tho they are no longer vegetarians. So when we are together its always requested.
     
  5. My best friend Georgia H. used to make this and everyone loved it. One time when she and I arrived at a potluck someone said "the Special K Loaf is here!" Now I'll try making it myself.

Tweaks

  1. 1. I double the recipe and bake it in a 9x13” pan. 2. I leave out the oil! Because, really! It has enough fat without it. I also leave out the salt and sage. 3. I use low fat cottage cheese. And replace at least 1/3 of the eggs with egg white. (1 egg=2 whites) 4. I add about 3-4 cups of finely chopped veggies (cauliflower, broccoli, carrots, zucchini, mushrooms, etc) and sauté (dry/steamed) with the onion. 5. I use onion soup mix (1 pkg) My original recipe from my Mom called for G Washington broth mix. But it’s very hard to find. (She also added some crushed shredded wheat to the cereal!)
     
  2. This recipe can also be made with any brand of cornflakes and not Special K, but you do need to add one package of onion soup mix in that recipe.
     
  3. been making 50 years. no oil. add mushrooms and g&w broth packet. any flake cereal will work.
