Speedy White Chicken Enchiladas

- 2 (10 3/4 ounce) cans cream of chicken soup
- 3⁄4 cup sour cream
- 1 tablespoon butter or 1 tablespoon margarine
- 1 large onion (chopped)
- 2 teaspoons chili powder
- 2 (13 ounce) cans shredded chicken
- 2 (4 ounce) cans chopped green chilies
- 10 flour tortillas
- 2 cups shredded cheese
directions
- Mix soup and sour cream and set aside.
- Heat butter in medium saucepan.
- Add onions and chili powder and cook until onions are tender.
- Add the canned chicken and chilis and 3 tablespoons of the sauce mixture.
- Spread 1/2 cup of the soup mixture into a 9x13 pan.
- Spoon mixture into tortillas, roll up, and place (seam down) on top of the soup mixture.
- Spread remaining sauce mixture on top, and cover with cheese.
- Bake at 350 degrees for 30 minutes -- or until cheese is bubbly and browning.
- Suggestion: One can use chopped/shredded leftover chicken rather than canned chicken.
- Suggestion: Serve with salsa and chips for a great meal!
- Suggestion: This is a very forgiving dish. I have added black olives, used less chicken, doubled the sauce mixture, upped the spice factor, etc. You can easily tweak this recipe to your liking.

I've made enchilada's similar to this b/f and so knew this would go over with the fam. I did take your last suggestion about this being a very forgiving dish and did make a few additions/deletions. I omitted the onion and green chili's per families request. I did add 2 t.'s of cumin and 1 t. of seasoned salt. A really good and yummy filling meal. Made for ZaarStars!~

Before getting on with this review, this is the second recipe that I have tried from iewe. And just like the first one, this one is also a " KEEPER ".Now on with the review, I made this recipe on 8/7/11 for the " Stop and Color " Event in the Food Photo Forum.Except for cutting the recipe in half,this was made as it was written and I used leftover shredded chicken.The baking time was " RIGHT ON ".And for a bit of color I did add some diced tomato to my plated portion.<br/>Both my SO and I thought it was very good. Thanks for posting a recipe that will surely be a repeat at our home. " Keep Smiling :) "

My teenager is the pickiest eater in the world, while my 3 year old will eat anything (though has been acting more and more fickle lately). Our newest addition was born in June 2008, so she doesn't really know much in the way of varieties of food. My husband says "I don't care what you fix, as long as it has meat in it."
I have thousands of recipes saved on my computer from over the years, and am constantly on the lookout for new ones. I also seem to have accumulated hundreds of cookbooks over the years. I am (slowly) trying to go thru all the recipes I have saved and add them to 'Zaar, but this will take some time. I try to only post things that my family (or I) will eat (though I haven't necessarily yet tried every recipe I have posted).
