Spicy Banana Bars

  • Preheat oven to 350 degrees F.
  • Grease and flour a 13"X9" pan.
  • Cream together margarine and sugar.
  • Beat in the egg.
  • Stir in banana.
  • Stir in the milk.
  • Combine flour, baking powder, salt, baking soda, cinnamon, allspice, and nuts (if using).
  • Stir into creamed mixture.
  • Spread in the pan.
  • Bake 20-25 minutes at 350F.
  • until golden brown.
  • Frosting: Melt margarine.
  • Stir in icing sugar and lemon juice.
  • Stir in water, 1 tsp.
  • at a time, to get a good spreading consistency.
  • Spread over warm bars.
  • Cool completely.
  • Cut into bars.

  2. These were really good! They made a nice, light snack. They were rather thin though, so use a smaller pan.
     
  3. I used wholewheat flour and didn't ice them. They were like a pan version of banana bread which is excellent if you don't have enough bananas to make a whole loaf.
     
  4. I actually made these bars for my dog's 13th birthday (a good excuse for a family get-together to eat!). Although these are thin like bars, they taste like cake to me - next time I make them, I'll probably put them in a 9" square pan. A couple of people thought the bars were carrot not banana - I guess because of the spices. I didn't get around to doing the icing until the bars were cooled & they turned out great!
