  • Stir together Sherry, cornstarch, and 1 tblsp soy sauce, then stir in sesame oil.
  • Add pork, stirring to coat well, and let stand 10 minutes.
  • Stir together sugar and remaining 2 tblsps soy sauce.
  • Heat a wok or large nonstick skillet over high heat until a bead of water dropped on cooking surface evaporates immediately.
  • Add 1 1/2 tablespoons peanut oil, swirling wok to coat evenly, then stir-fry 1 teaspoon ginger, 1 teaspoon garlic, and 1/4 teaspoon pepper flakes until fragrant, about 5 seconds.
  • Add bell pepper and stir-fry 2 minutes.
  • Add snow peas and cashews and stir-fry until snow peas are crisp-tender, 1 to 2 minutes.
  • Transfer vegetables to a bowl.
  • Heat remaining 1 1/2 tablespoons peanut oil in wok until just smoking, then stir-fry remaining ginger, garlic, and pepper flakes until fragrant, about 5 seconds.
  • Add pork and stir-fry, separating strips, until browned and barely cooked through, 2 to 3 minutes.
  • Add vegetables and sweetened soy sauce, then stir-fry until vegetables are just heated through, about 1 minute more.
  • Serve with steamed rice.

  1. Another excellent dish. Yes, the pork was the best part. I've never done breading like that before, but it was perfect! I might try that with sweet and sour chicken sometime... Oh, yeah, we skipped the soy sauce due to allergy...
     
  2. Exceptional is right! The best part of the stir fry is the pork and I generally prefer the vegetables. It was so tender and flavorful. Beautiful, colorful presentation. It's a simple and truly outstanding recipe.

  4. Delicious! We loved this very yummy pork stir-fry. It was as good as any I've had in a restaurant. The pork was very tender and had a fabulous flavor. The added zing of the red pepper flakes was a very nice touch. I served this over jasmine rice and it was gone in a hurry. I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
