Spicy Garbanzo Soup (American Heart Association)

- 3 (6 ounce) cans no-salt-added tomato juice
- 3 tablespoons no-salt-added tomato paste
- 1⁄4 - 1⁄2 teaspoon hot pepper sauce (to taste)
- 1 (15 ounce) can no-salt-added garbanzo beans, drained
- 3⁄4 cup cooked chicken or 3/4 cup turkey, cubed
- 1⁄2 teaspoon dried oregano
- 1 avocado, peeled and diced
- 2 tablespoons fresh parsley, minced
directions
- In a saucepan over medium-high heat, heat tomato juice, and tomato paste, mixing well.
- Add garbanzos and chicken or turkey and bring to a low boil.
- Reduce heat and add oregano. Simmer for 5 minutes.
- Stir in diced avocado and heat for 2-3 minutes.
- Serve hot and garnish with the parsley.
