Spicy Oatmeal Cookies

60 cookies
ingredients
- 2 cups sugar
- 1 cup shortening
- 4 eggs
- 3 cups oatmeal
- 1 cup chocolate chips
- 2 teaspoons baking soda
- 1 cup milk
- 1 teaspoon salt
- 1 teaspoon clove
- 2 teaspoons cinnamon
- 2 teaspoons vanilla
- 5 cups flour
directions
- Mix ALL ingredients together, thoroughly.
- I like to mix this in my Kitchen Aide Mixer.
- Drop by rounded Tbsp onto greased cookie sheets.
- These cookies rise as opposed to spreading out.
- Bake in a pre-heated 400 degree oven, 12-15 minutes.
- Remove to wire rack to cool.
- Enjoy!

Laudee, you should have seen me...I read, 'I use my KitchenAid mixer for these' and I thought, 'Well, I always use my KitchenAid for cookies.' ...and I proceeded, never giving it it thought 'how very many cookies this recipe would make'...who looks at numbers anyway?! Obviously NOT ME! ...'cause I also 'auto-doubled' It was too late to back up by the time I realized what I was doing, so I kept going... I ended up having to mix in the last '7' cups of flour by hand (poured the cookie dough into my big stew kettle) and folding the chocolate chips in at the end. I thought I was baking cookies forevvvvvveeeeeerrrrr... These are really good. I agree with someone else that the flavor could be stronger. The house was filled with the smell of cinnamon, but they seem to only hint at having any cinnamon in them...we all love cinnamon! DH really liked them but asked why I shortchanged on the chocolate chips so much (yes, I doubled the chocolate chips too), so next time I will add at least twice as many chocolate chips, possibly more. In the instructions you had mentioned these rise as opposed to spreading out, so I was expecting a chewy cookie, but was not unpleasantly surprised when they turned out to be more of a cake-type cookie. They are very similar to a recipe I've been trying to find for years. The lady who use to make them has long since passed away and being an 'invincible teen' at the time, I never thought to ask her for the recipe. Texture-wise these are a perfect fit and the flavor is almost there. With a little tweeking I think I'll have it. Thank you for sharing these Laudee!!!

These cookies are AMAZING!! I don't like chocolate chips so I leave those out, but holy crap they are good. I cook a big batch and then freeze them in baggies so I can pull out two and pop them in the microwave for 30 seconds. The only thing I had a problem with is the temperature of the oven. I have to lower it to 350 or the bottoms of my cookies start to burn.
