ingredients
- 3⁄4 cup fine bulgur
- 1 cup hot water
- 2 tomatoes, seeded and diced
- 1 1⁄2 cups curly or flat leaf parsley, finely chopped
- 1⁄4 cup of fresh mint, finely chopped
- 1 English cucumber, seeded and diced
- 4 green onions, finely chopped
- juice of one lemon
- 1⁄4 cup olive oil
- 1 jalapeno pepper, seeded and finely chopped
- salt
directions
- In a bowl, soak the bulgur in the hot water for 30 minutes.
- In a large bowl, combine the bulgur with the remaining ingredients. Season with salt.

This is the best tabbouleh I have eaten. The hint of jalapeño-spiciness is delightful, not overwhelming; it's a divine compliment to the other garden flavours. I could only add the little bit of mint that's growing so far in our garden, but it is just enough to taste. Perfect summer food! Thanks for posting ~ made for ZWT 6.
