  1. In a large bowl combine, sugar, butter, corn syrup and vanilla; mix well. Set sugar mixture aside. Boil pecans in water for one minute; drain. Immediately toss pecans in large bowl with sugar mixture. Cover bowl and let sit 12 to 24 hours.
  2. Place pecans on an ungreased jelly-roll pan. Bake at 325°F for 30 minutes, stirring every 5 minutes. While pecans are baking, combine remaining spice ingredients in a large bowl. After baking pecans, immediately toss the with the spices until well coated. Spread pecans on jelly-roll pan in a single layer to allow to cool.
