Spinach Lasagna Roll-Ups (Meatless)

  • In a bowl, combine the spinach, mozzarella, cottage cheese, 1/2 cup Parmesan and egg.
  • Spread a heaping 1/3 cupful over each noodle.
  • Roll up and secure with toothpicks.
  • Place seam side down in an 11 x 7 x 2 inch baking dish coated with non-stick cooking spray.
  • Cover and refrigerate overnight.
  • Remove from the refrigerator 30 minutes before baking.
  • Pour tomato or spaghetti sauce over roll-ups.
  • Cover and bake at 350 degrees Fahrenheit for 33-38 minutes or until bubbly.
  • Sprinkle with remaining Parmesan cheese.
  • Discard toothpicks.

  2. Really liked this, 1yo DS did not...I made it for him because he loves veggie lasagna. Oh well! Seems this dish is just lacking a little substance, I think it's because I prefer ricotta over cottage cheese. Other than that, this is a great standard to keep in your cookbook!
     
  3. I enjoyed this- dh did not. I loved that it could be made ahead. Great choice for a dinner party. If you are not watching the fat and calories you may want to up the cheese value which imho is where dh lost it. Thanks for a great recipe Crafty.
     
  4. Very easy and tasty. This recipe combines some of my favorite ingredients - spinach, cheese and noodles. I followed the recipe exactly using freshly shredded Parmesan and mozzarella. I did use plain tomato sauce, and didn't have time to season it so I just sprinkled some Italian seasoning on top. Oh, and I didn't have any wooden toothpicks, so I used some wooden skewers that I already had. Toothpicks would be better since they would make everything fit into one pan for baking more easily. Made for My 3 Chefs.
     
  5. Total Winner! I used whole wheat lasagna noodles, which DH hates, and you couldn't even tell because the flavors from all the other ingredients were just so wonderful. Very filling and looks very elegant for something so easy! Thank you!
