  • Cook bacon in 10" skillet over med-high heat until crisp.
  • Stir in vinegar, sugar and mustard; continue stirring til sugar is dissolved.
  • Toss spinach, mushrooms, cheese and shrimp in large bowl.
  • Drizzle hot bacon dressing over spinach mixture.
  • Toss to coat.
  • Serve immediately.

  1. Loved this salad! I've made other similar spinach salads but this was by far the best. Colour contrasts make a great presentation too. I used baby spinach (more $ but better texture than mature) and cremini mushrooms. I did add another tbsp. sugar because we like our dressings somewhat on the sweet side, but that is just a personal preference Served it with a penne/asparagus/roasted red and yellow peppers/garlic dish. Guests declared it 'gooood!' Thanks!
     
  2. Delicious! We sauteed some garlic and threw the mushrooms in it briefly to warm them up. Will definitely make again! Next time I may add some fruit like mango. Thank you!
     
  3. Absolutely delicious! I wasn't sure about the bacon-grease based dressing, but wow...it was amazing. I served this salad with a 6 oz salmon fillet baked with butter and lemon. I will definitely be doing this again!
     
  4. We have made this twice in a week! Dh isn't a big salad person, but in the last few years does like spinach salad. Even making a smaller version with less bacon and shrimp, this is a very tasty and easy recipe. Don't have the feta cheese, but was great even without it! Great recipe!

I love to cook and so I am thrilled that I found recipezaar. I work as an educational assistant in a food school so I am around food all day long. I have four children, three of which have already flown the coop so to speak but I still have my 'baby' at home. (He's 21). I am lucky in that I have my summers off so I spend a lot of time trying new recipes and catching up on my reading. I also play soccer in a ladies league to stay in shape.
