Spinach With Sardines (Espinafre Con Sardinhas)

- 1 (8 ounce) can sardines, large size (guessing at weight)
- 2 tablespoons onion juice
- 2 cups cooked spinach, chopped
- 1 hard-boiled egg
- 1⁄4 teaspoon pepper
- 1⁄2 cup breadcrumbs
- salt
- 1⁄2 lemon, juice of
- butter
directions
- Skin, bone and chop the sardines; mix with the spinach, bread crumbs, lemon and onion juice, a little of the spinach liquor, the chopped egg white and half the chopped yolk; season to taste.
- Put in a buttered baking dish; sprinkle with remaining yolk over the top and dot with butter.
- Bake for 15 minutes in a 350* oven.
