Ingredients Nutrition

  • 3 lbs yellow squash, Sliced
  • 12 cup onion, chopped
  • 12 cup butter
  • 12 teaspoon black pepper
  • 2 eggs, Beaten
  • 34 cup saltine crumbs or 34 cup cracker meal
  • 1 teaspoon salt

Directions

  1. Cook Squash Covered in a small amount of boiling water 10 to 15 minutes or until tender.
  2. Drain Well and Lightly Mash.
  3. Set Aside.
  4. Saute Onion in butter until tender.
  5. Add Onion, Eggs, Cracker Crumbs, salt and pepper to squash.
  6. Stir Well.
  7. Spoon Mixture into a lightly greased 2 quart casserole.
  8. Bake uncovered @ 350 for 20 minutes, or until lightly browned.
