Steamed Mussels in Coconut Milk

  • Heat the oil in a large Dutch oven. Add the onions and fry over medium-high heat until the edges turn light brown. Next add the ginger and continue frying for 1 minute, stirring constantly. Put in the ground masala and stir for another 1 to 2 minutes.
  • Add the salt, coconut milk, and 1 cup water and bring to a boil. Now put in the mussels, spooning some of the sauce over them. Cover and steam 7 minutes or until all the shells open. Remove from the heat. Discard any shells that aren't open.
  • Sprinkle with the lemon juice and cilantro and stir gently. Spoon the mussels into individual bowls along with some of the sauce. Serve immediately.

  2. This is an excellent recipe. I had no cayenne, so I used ground pequin peppers. Yummy. Had with Chucumber (I used recipe #187803).
     
  3. Brilliant ..... delicious .... need I say more ?? I added king prawns to the mix too and it's delightful. Should think it's nice with chicken as well. Although I substituted Cilantro for Corriander (if you like it)
     
  4. Absolutely amazing! I did not have any fresh lemon to dress the dish, but truly delicious. The local supermarket gets mussels frequently and these mussels were delivered the day before. Every mussel opened except two. As I was reading the recipe I noticed the 1 cup of water and I substituted bottled clam juice. With a shallow large fry pan and cover the 7 minutes for the mussels was perfect. The only thing I would change is that there isn't canned Coconut milk that supplies 2 cups so the one can was totally sufficient. We served it with good crusty bread. it was OVER THE TOP!

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
