- 1 onion, chopped
- 3 tablespoons butter
- 2 lbs broccoli stems, peeled and chopped
- 5 cups chicken broth
- 1 cup cream
- white pepper

- crouton (optional)
- parmesan cheese (optional)
- sour cream (optional)
directions
- In a medium saucepan, cook onion in butter over medium heat until softened.
- Add stems and broth, cover and continue cooking until broccoli is soft (about 25 minutes) Puree in batches in blender, return to pan and stir in cream.
- Reheat soup and add pepper.
- Serve with any garnishes.

I've had such a craving for Cream of Broccoli soup and this was perfect! I don't like thick cream soups, this one is thinner with a very fine flavor. Be liberal with the white pepper, it really adds to the flavor. I served it with croutons made from leftover restaurant garlic bread (I hate wasting anything!) Thanks Peachez for a nice recipe!
