- 1 lb flank steak
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional)
- 2 tablespoons cornstarch
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 2 cups sugar snap peas
- 4 tablespoons oil
- 1⁄2 teaspoon salt
- 1⁄2 cup water chestnuts or 1/2 cup bamboo shoot
- 1⁄2 cup sliced mushrooms
directions
- Cut beef, across the grain, into thin slices. (Meat is easier to slice when it is partly frozen). Marinate beef in mixture of soy sauce, oyster sauce, cornstarch, sesame oil and sugar. Set aside. Remove stems and strings from sugar peas, leaving pods intact. Rinse and pat dry with paper towels. Place 2 Tblsp. oil in a hot wok. Add salt, sugar peas, waterchestnuts and mushrooms. Cook, stirring constantly, until peas become a darker color green (about 2 min.). Remove from pan and set aside. In the same wok, add remaining 2 Tblsp. oil. Stir in beef mixture; cook for about 5 minutes, stirring constantly. Return sugar pea mixture to wok and mix thoroughly until hot. Serve with steamed rice.
