  • Bring all ingredients to a boil in a heavy small sauce pan, stirring constantly and crushing berries slightly with back of spoon.
  • Boil 2 minutes to thicken, stirring constantly (mixture will be slightly chunky).
  • Pour into bowl and cool completely.

  1. I have two questions please: Does any one know how many Cups or ounces one batch of this recipe makes? Also, I noticed someone said it has to be refrigerated but not sure why as no other recipe nor ones purchased at wholesale providers needs to be refrigerated after filling a cupcake? Thanks so much for your time and assistance.

  4. i actually have 2 questions: ~ how much does this make? ~ does it need to stay refrigerated? most of the other recipes ive looked at require refrigeration even after spreading between the cakes - which i cant do because my cake frosting cant be refrigerated ..

  2. This recipe as written had great consistency, and I am sure if your strawberries are sweet it tastes great too. My strawberries were frozen from my garden and were quite tart...even adding extra sugar didn't help, so after making the original recipe I ended up adding a package of strawberry jello mixed with 1/4 cup of boiling water and a splash of corn syrup and that fixed the taste and added a little extra firmness from the jello. It was perfect with "White wedding cake" I made it with.

  4. This is my new go-to recipe for whenever I need strawberry filling for a dessert! It was super easy and was great. Used it to fill some store-bought cakes and topped it with fresh whipped cream for a simple summer dessert.
