Ingredients Nutrition

  • 2 cups sliced fresh strawberries
  • 1 cup unsweetened apple juice
  • 12 teaspoon freshly ground nutmeg
  • 12 teaspoon ground coriander
  • 5 tablespoons fruit juice-sweetened strawberry preserves
  • 3 tablespoons superfine sugar
  • 3 cups evaporated skim milk, chilled
  • 14 teaspoon almond extract


  1. Combine strawberries, apple juice, and spices in a small heavy bottomed saucepan.
  2. Bring to a boil.
  3. Stir in conserves and sugar.
  4. Chill.
  5. Pour milk into a large bowl.
  6. Stir in strawberry mix and almond extract.
  7. Turn into ice-cream maker, following manufacturer’s instructions.
  8. Yield: 1 quart.
  9. NOTE: Because there is no fat in this ice-milk, it will become hard when frozen for longer than 12 hours.
  10. To soften, transfer from freezer to refrigerator 1 hour before serving.
