Stuffed Dates and Pecans

"I had these at a congregation in Waco, TX and went home and prepared them myself! Used them for Rosh HaShanah and they were a hit! Tip: If the dates are too soft, put them in the freezer for two hours before you begin."

  • Slice each date in half.
  • Remove the pit of each date.
  • Fill each date half with 1/2 teaspoon of cream cheese. (or as much or as little cream cheese as you desire! It's according to taste!).
  • Place a pecan half on top of each cream cheese-filled date half.
  • Refrigerate or serve immediately.

Hi! I am a married, Messianic Jewish mother of three (and we're Torah Observant!). I am a SAHM. I am an advocate of polygamy and breastfeeding(Such a weirdo!) I am slim but have high blood pressure (STRESS INDUCED!!) so I am constantly searching for low-sodium recipes and heart-heathly regimens for myself. We have no salt in our house and have now switched to brown sugar! My pet peeve -- candy! I really can't stand it! It's a source of contention between me and my daughter (4 y/o), lol. My TWO favorite cookbooks are mine and my mothers -- they are compilations of all the recipes we've tried or want to try! Some are hand written with our own specific instructions and I just love that! My mother's own has over 30 years of good cooking in it; when I am at her house I sometimes just sit at the table and read through it. We are biblically kosher.
