Sugar Free Applesauce Raisin Muffins

"These are delicious with cream cheese. I found this recipe in Know Your Apples M.A.C.S Alumni Scholarship Fund cookbook. This recipe was posted by Eleanor Rose Morton. I have not tried this recipe, but I'm posting it for safe keeping."

  • Beat together egg, oil, and applesauce. Add flour, baking soda, baking powder and spices; beat well. Stir in raisins.
  • Spoon batter into oiled and floured muffin tins. Bake at 375 for 20-25 minutes or until firm to the touch and browned. Cool on wire rack.

  1. Baking made simple - YEAH!! Easy recipe to follow????Great sugar free muffins?? Used coconut oil instead & added 1/2 cup of crush pineapples & 1 tbsp of vanilla - The muffins were DELICIOUS??
     
  2. I am always looking for recipes that do not contain any white sugar. These muffins were very good. I will list my tweaks.
     
  3. Just made these- don't know why it says it only serves 6-8. If you only use 1/4 cup per muffin tin you get an even dozen and fewer calories per serving.With my tweaks comes to 152 calories per muffin. Don't know why poster said they're delicious with cream cheese if she never made them?? Quite bland and dry but I sort of expected that! Baked 22 min- Next time would try only 20 min and adding a chopped apple or finely shredded carrot tossed in some lemon juice or zest. Might be nice with a low carb/sugar vanilla yogurt like Kroger's Carbmaster.
     
  4. I used 1 1/2 cup white whole wheat and1/2 cup all-purpose flour and used sweetened apple sauce. With these substitutions they are pleasantly dense, and lightly sweet. They would be a good option for toddlers. A bit of salt would improve the flavor.
     
  5. I made this recipe with a few modifications-while putting the dry ingredient in, I realized there was no sugar (aside from the applesauce). I used 1/4 c. white sugar and 1/4 cup splenda. Instead of raisins, I used 1/2c. walnuts and 1/2 c. dark chocolate, and also whole wheat flour. SO good!

Tweaks

  1. I used my homemade chunky applesauce, plus I added one large, peeled, chopped up fresh apple. For a little sweetness, I added 3 tablespoons of real maple syrup. (could probably use the same amount of honey). I omitted the raisins, (husband is not a fan), but added some chopped walnuts. I also needed to add about 3 TB of water. If you love baked apples, like I do, make sure to add the extra fresh apple. Also, I used paper muffin liners, but the muffins stuck to them. So, next time, I will grease the muffin tins.
     
  2. Subbed 2/3 cup of the flour with old-fashioned oats and increased to 1 1/2 tsp cinnamon, only had 3/4 cup raisins in my pantry
