Sugar Free Applesauce Raisin Muffins

- 1 egg
- 2 tablespoons vegetable oil
- 1 1⁄2 cups unsweetened applesauce
- 2 cups unbleached white flour
- 3⁄4 teaspoon baking soda
- 2 teaspoons baking powder
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon cinnamon
- 1 cup raisins
directions
- Beat together egg, oil, and applesauce. Add flour, baking soda, baking powder and spices; beat well. Stir in raisins.
- Spoon batter into oiled and floured muffin tins. Bake at 375 for 20-25 minutes or until firm to the touch and browned. Cool on wire rack.

Just made these- don't know why it says it only serves 6-8. If you only use 1/4 cup per muffin tin you get an even dozen and fewer calories per serving.With my tweaks comes to 152 calories per muffin. Don't know why poster said they're delicious with cream cheese if she never made them?? Quite bland and dry but I sort of expected that! Baked 22 min- Next time would try only 20 min and adding a chopped apple or finely shredded carrot tossed in some lemon juice or zest. Might be nice with a low carb/sugar vanilla yogurt like Kroger's Carbmaster.

I used my homemade chunky applesauce, plus I added one large, peeled, chopped up fresh apple. For a little sweetness, I added 3 tablespoons of real maple syrup. (could probably use the same amount of honey). I omitted the raisins, (husband is not a fan), but added some chopped walnuts. I also needed to add about 3 TB of water. If you love baked apples, like I do, make sure to add the extra fresh apple. Also, I used paper muffin liners, but the muffins stuck to them. So, next time, I will grease the muffin tins.

I'm a part time college student studing Early Childhood Education, but taking time off and hoping to return soon.
