Super Easy Canned Bean Stew

"Super fast stew for when you need something fast and healthy. This relies on canned goods so you can stock your pantry instead of running out for fast food. Adapted from a recipe in "Healthy Foods". You can use whatever spices you choose. Sometimes I add cumin, sometimes I add Italian seasoning. It depends on my mood and what types of beans and tomatoes I have added."

  • Sautee the onion and carrots in some cooking spray.
  • Add the broth, the drained beans, and the canned tomatoes.
  • Season with spices (add different things as the mood strikes you).
  • Simmer for 10 minutes.

  1. This was delicious! I decided to use a pound of cooked dried black beans, and fresh tomatoes, basil and parsley. I also added just a little chili powder. My kids asked for seconds! I'm saving this recipe-I know I'll make it the super easy way in the winter months. Thanks!
     
  2. This was a very satisfying soup. I used four different kinds of beans. I drained and rinsed the beans. Added an extra carrot and some chopped collard greens from the garden. Used fresh garlic in addition to some pepper and again some fresh summer savory from the garden. I usually add a half pound of meat to my soups, but didn't this time. It was very good without it and the real miracle was that DH liked it and didn't even comment on the fact that there was no meat!
     
  3. Yes - I also loved this recipe! Like Sharon, I addded some chopped celery. For the tomatoes, I used roasted garlic & onion flavor. Chicken broth was my choice for the base, and I added a teaspoon each of Cajun seasoning and red pepper flakes - nice & spicy! For beans - one can each: garbanzo, kidney, great northern and black. Oh - and a bit of cooked rotini pasta (as if the beans weren't enough carbs already!). This makes a lot, but that was in my plan because I will have lunch for work all week. Thanks for posting - this will become a quick & easy keeper!
     
  4. I loved this meal! It was super easy to make although I did make a few changes. I added celery(sauteed along with the onions and carrots), used fresh tomatoes instead of canned, and quartered the recipe. It turned out delicious! Oh, and I used water with veggie boullion for the broth. Thanks so much for a lovely, EASY recipe! I will make this often!
