Superb Lite Chicken Salad

ingredients
- 1 lb chicken breast (dark meat can be used, though I prefer the white)
- 1 small apple
- 15 -20 green seedless grapes
- 1 tablespoon finely chopped onion (green onions work well also)
- 1 stalk celery
- 1⁄2 cup low-fat mayonnaise
- 1⁄2 cup light sour cream
- 1 tablespoon Dijon mustard (or honey mustard)
- 2 tablespoons sugar
- 2 tablespoons lemon juice
directions
- 1. Trim and dice the chicken breasts. Cook until slightly browned. Cool completely and then chop until pieces are about the size of raisins or slightly smaller but do not shred. Place in mixing bowl.
- 2. Peel, core and dice the apple and add to chicken with the chopped onion.
- 3. Dice the celery and cut the grapes into quarters (or 6th's if larger grapes are used) and add to chicken.
- 4. In separate bowl combine last five ingredients and blend well. Stir into chicken mixture.
- 5. Refrigerate several hours to allow flavors to blend and enjoy.

Chef Larz I love all the ingredients in your recipe but sorry to say together they did not work to well for me. I used a red onion, omitted the sugar because my apple was pretty sweet and the dijon mustard. The grape texture didnt go to well with the celery and apple for me. I would have preferred either a savory crunchy salad or a sweet fruity salad, not the two combined. Made and reviewed for the Cookbook Forums Theirs, Yours & Mine photo tag game.
