- 2 cups jasmine rice
- 13 1⁄2 ounces coconut milk
- 2 cups water
- 1 teaspoon kosher salt
- 1 tablespoon vinegar (splash)
- 2 -3 teaspoons sugar
- 1⁄2 cup green onion, chopped
- black pepper, to taste
directions
- Combine rice, coconut milk, water, salt, vinegar, and sugar in a saucepan and bring to a boil. Turn heat to low and cover for 20 minutes or until most of the liquid is absorbed. Allow to stand 5 minutes.
- Add green onions, pepper, and additional salt if necessary.
