  1. To prepare the filling/topping:
  2. melt butter on a hot pan.
  3. add sweet corn and thyme; carmelize and set aside.
  4. slice heirloom tomatoes (use various sizes and colors and shapes for a distinct look).
  5. To make the galette dough:
  6. combine flour, cornmeal, salt and pepper into a food processor; pulse until combined.
  7. then add cold, cubed butter, cold water, and egg yolk; pulse again.
  8. remove and form into a a ball; cover with plastic wrap, and chill for one hour.
  9. To assemble:
  10. toss some flour on the surface, place down chilled dough and then pound and roll out until it's the size of a medium pizza (approx 12 1/2").
  11. scoop down ricotta cheese and spread; leaving approx 2" border.
  12. top with the carmelized sweet corn.
  13. and then top with slices of heirloom tomatoes, sprinkle more sweet corn and thyme.
  14. fold dough.
  15. brush on egg wash around the edges.
  16. bake 375F for 45mins.
  17. garnish with fresh thyme.
