Directions

  1. Make a dark brown roux, about 3 minutes.
  2. Add the onions and saute for 5 minutes, or until wilted.
  3. Stir in the garlic, pecans and water.
  4. Season with salt and cayenne. Bring the liquid to a boil.
  5. Add the sweet potatoes and blend to make the sauce smooth.
  6. Stir in the cane syrup and green onions.
