  1. Heat oil in the skillet, and add onions until lightly browned.
  2. Add sweet potato into the pan and cook until it is brown in spots.
  3. Stir in garlic, diced bell pepper, cumin, salt, chili powder, and half of the lime juice.
  4. After the garlic becomes more aromatic (approximately 30 seconds) add half of the broth, stirring to get any brown pieces off of the bottom. Let the broth absorb and add the rest as needed.
  5. Stir in corn and beans and let cook for a couple minutes. Top with the rest of the lime juice, cilantro, and cheese as wanted.
