Taco Joe Dip

"A Low Fat Southwestern treat. I found this hearty appetizer recipe in a magazine a few years ago, and it is one of our family's favorites. Not only is this very easy to make, but the fact that it is made in a slow cooker allows me to prep it earlier in the day before things get too hectic. I think you'll enjoy this as well. Leftovers are yummy spooned over a baked potato."

  • In a slow cooker or crock pot, combine all ingredients.
  • Cover and cook on low for 5-7 hours.
  • Serving suggestions:

  • Serve with tortilla chips.
  • Spoon over hot baked potatoes.
  • Roll in a warm tortilla.
  • Spoon over a bed of lettuce.
  • Use as an omelet filling.
  • Add shredded cooked chicken and serve over crushed doritos with a dollop of sour cream.

  1. Yummy in the tummy! My whole family loved this on tortillas chips. Second time, served it over rice. Added sliced black olives (as we can never get enough black olives) in my family. Thanks for a versatile and good recipe. Plus, I love anything you can cook in the crockpot!

  3. This is an easy, versatile crockpot dish. I plan to use mine as a filling for tacos and a topping for potatoes (it makes a lot) I made a couple of substitutions out of necessity and one out of preference. I had no canned corn so I used what I had left of a bag of frozen peas and corn and also added a small tin of chickpeas to bring it to 15 ounces. My preference substitution was to add some smoked paprika. Made for the Mexican leg of ZWT5
     
  4. I thought that this recipe was easy to make. I liked that you could throw everything in the crockpot and not worry about it. It makes a TON of dip--we had a large crowd for New Year's--but I think it serves more than 10-12 people as a dip. I thought that this dip was good, the flavor was good, but I did not hear any raves about it. People at our party said it was "good" as well, but didn't eat a lot of it. I served it with Tostito's Scoops. It reminded me of Taco Soup. Even though I drained everything that said to be drained, it still had a good bit of liquid with it. It just reminded me more of a soup than a dip. Thanks for sharing, and I may make it again, it just quite wasn't what I was expecting.
     
  5. This is ABSOLUTLY WONDERFUL!!! this sould have been reviewed over a year ago BUT... I saw when puting my cookbooks in order I hadn't I can't tell you how many times I've made this..more than 4.... EASY to put together... and wonderful tasting.... I had no black beans the 2nd time I made this so added a can of great northern in place of those with wonderful results... so If I have black I use them..if I don't I'll use great northern.... so glad to be able to FINALLY review this.. hoping others will see the review today and have another GREAT AWESOME EASY EASY EASY Dip for all the holiday get togethers we've got coming up..
