Taco Salad For A Crowd

"Posted in response to a request. Have not tried this recipe but it sounds easy and tasty. I would definitely add the chili powder or taco seasoning though."

  • In large skillet, cook ground beef and garlic until meat is no longer pink.
  • Drain fat.
  • Stir in chiles, tomatoes, kidney beans, salt and pepper (and chili powder or taco seasoning if using).
  • Simmer uncovered for 30 minutes.
  • Arrange tomatoes, lettuce, cheese, onion and sour cream in separate serving bowls.
  • Place tortilla chips, lettuce and meat mixture in serving dishes alongside toppings and allow guests to assemble their own salads.

  1. Excellent base recipe for taco salad with the flexibility to make it as spicy or mild as you like. I scaled it down to feed 4 and used a 10 oz can of Mild Rotel tomatoes with green chilies in place of the green chilies called for. The extra canned tomatoes made up for not having fresh ones on hand. I browned the beef, garlic and the onions together, then added 2-1/2 teaspoons of the seasoning mix from Recipe #327486 and a 1/4 cup of water to the drained beef mixture; simmered until the liquid was reduced and then proceeded with the recipe. The seasoning mix is one of our favorites for tacos and that combined with the Rotel added a nice spicy kick to this recipe. Love to read. I collect books and have quite a collection but am always adding more. I have also discovered audio books and find that I am able to get through more books by listening to them. Have recently started knitting and I really enjoy it even if it is quite a challenge at times. Always searching for a great recipe in any food category. As might be expected I never find "The One" but find many delicious ones along the way. One of our favorite restaurants is Jensen's Supper Club located in Eagan, MN.
