  • Remove the ends from the zucchini and cut length-wise into three. Slice each into tagliatelle. Blanche 1-2 mins; drain.
  • Slice the tomatoes and the mozarella.
  • Put the zucchini in a baking dish. Top with tomato and mozarella slices, parmesan cheese, salt and pepper to taste. Put under a pre-heated grill until golden brown.
