- 2 zucchini
- 3 small ripe tomatoes
- 130 g fresh lowfat mozzarella cheese
- 50 g parmesan cheese, grated
directions
- Remove the ends from the zucchini and cut length-wise into three. Slice each into tagliatelle. Blanche 1-2 mins; drain.
- Slice the tomatoes and the mozarella.
- Put the zucchini in a baking dish. Top with tomato and mozarella slices, parmesan cheese, salt and pepper to taste. Put under a pre-heated grill until golden brown.
