  1. Score both sides of the chicken breasts and/or drumsticks about 5mm apart. Place the chicken in a bowl and add the lime juice and salt. Mix well, rubbing the salt and juice into the scores. Leave aside.
  2. Blend the yoghurt, onion, garlic, ginger, chilis, garam masala and red food colouring to a smooth paste. Pour the marinade over the chicken pieces and mix well to ensure the chicken pieces are well coated.
  3. Cover and refrigerate for 4 hours or overnight.
  4. Pre-heat the oven to its maximum temperature (250 degC).
  5. Place the chicken pieces on a roasting tray and allow much of the marinade to drain off. Put in the oven and cook for 20 to 25 minutes.
  6. Serve hot.
