Tasty Tortilla Breakfast Sandwich

"This is an easy thing to fix if you're in a hurry but still want something tasty and healthy for breakfast. You can be flexible with the fillings. I used eggs, American cheese, chopped onion, ham and tomato. This is baked in the oven and turns out to be like a Hot Pocket, but it is much better for you. You can also make a bunch of these ahead of time and freeze. Then to reheat, just pop in the microwave for a minute."

  • -Preheat oven to 375.
  • -Treat sheet pan with nonstick cooking spray.
  • -Microwave tortillas for 20 seconds each (ovens vary).
  • -Put fillings in the middle; any order you choose.
  • -Roll up egg roll-style.
  • -Put seam-side down on sheet pan.
  • -Bake for 15 minutes.
  • -Let rest for 2 minutes.
  • -Eat whole, or cut in half and enjoy.

  1. Oh, this is one of my go-to lunch wraps, but I use some salsa instead of the tomatoes... and I nuke them to speed up the cooking process. Just wrap the assembled wrap in paper towels (seam side up) and put in the microwave at 50% power for about 20-30 seconds (increase by 10 second intervals, until the cheese is melted), unwrap and enjoy! You do have to adjust the time according to the ingredients you used. Very good with sausage, too, but cook it first before adding to the wrap.
     
  2. Good idea. I made pico de gallo and put the scrambled egg, pico de gallo, bacon, cheese and rolled them up. This is a keeper and had plenty of flavor!

This recipe was ok I only gave it 3 stars because I am not crazy about warm or hot tomatoes, and the eggs made the tortillas a little mushy so I grilled the sandwiches on a cast iron skillet for a couple seconds, it worked out really well,, thank-you

The only thing I did differently was to add some dried chives instead of chopped onions. I also used wheat tortillas (that's what I had on hand). This is definitely a keeper. Thanks VickyJ!!!!
     
  5. Very tasty. I used the green tortillas (spinach? I think?) instread of tomato-basil. Served with orange breakfast rolls.

  1. Sundried Roma tomatoes in olive oil instead of fresh tomatoes. Excellent! Also fresh spinach and feta scrambled into eggs. Avocado is good, too. Works well for diabetic breakfast! Very versatile.

Hello! I am a resident of WA state, and I must say I love it here.... especially where coffee flows so freely! I live with my SO, Mark, and he has lived here since 2001 (originally from San Diego, CA). We live a quiet life and enjoy just about anything outdoors. I love to travel... sometimes just to pick a spot on the map and make a weekend out of it. Since I have been here, some of my favorite places to visit are Oregon and Washington (Cle Elum, Leavenworth, Spokane, Bonney Lake, Maple Valley, Issaquah, etc). My favorite place in Seattle is Pike Place Market, even though I don't get there often. And, Mt. There was a question posted in one of the forums about who I would love to have for dinner, right now. I answered God, Jesus, my mom, Grandma Lundin, Grandpa Lundin and Aunt Sig. They are my role models in life. Each has molded me into the person I am now. My fondest memories are spending Thanksgiving and Christmas-time at my Grandma's house, and the whole family around. SO MUCH good food! I lived in that small city my whole life and graduated from high school just outside of town. I have a strong restaurant background.. everything from Pizza Hut to a local italian restaurant called Vullo's. It seems, though, I have a passion for machining technology, even though I didn't go to school for that. I grew up with a local manufacturer of machine/tooling systems soldering/wiring circuit bds and assembling whole systems. That wasn't enough for me so, I went to college and obtained my AAS in Electrical Technology. The same company hired me back to work in their service dept as a technician. I had planned to go further to become an electromechanical engineer for the company, but I was laid off. I have been out of it so long, I would probably have to start over from scratch.. .that is the problem with electronics/technology.
