Terry's Cajun Red Beans

  • Soak beans overnight in 2 quarts of water. Drain.
  • In a large pot, saute the bacon until the fat starts to render. Add the smoked sausage and chicken and stir until it starts to brown. Add the onion, bell pepper, celery and garlic until it starts to soften. Stir in the Cajun seasoning, salt and red pepper.
  • Add the soaked beans and bay leaf and 2 quarts of water. Bring to a boil and turn down to a simmer. Simmer for 1 1/2 to 2 hours, or until the beans are tender, but not mushy. Remove the bay leaf and chicken and take the meat off the bones. Add the chicken meat back to the pot and serve over rice.
