  • 2 cups dried black-eyed peas
  • 8 cups water
  • 1 -3 fresh jalapeno pepper, seeded and quartered lengthwise
  • 1 12 teaspoons dried sage, crushed
  • 1 teaspoon salt
  • 1 lb turkey or 1 lb pork tenderloin, cut into 1-1/2-inch pieces
  • 2 medium summer squash, cut into wedges
  • 12 cup finely chopped red onion (1 medium)
  • 13 cup snipped fresh cilantro
  • 1 recipe lime sour cream (see recipe below) (optional) or 1 sour cream (optional)
  • finely chopped fresh jalapeno pepper (optional)

  • Sort through peas to remove any pebbles or other foreign matter. Rinse peas. In a large saucepan combine peas and the 5 cups of the water. Bring to boiling; reduce heat. Cook, uncovered, for 10 minutes. Remove from heat. Drain and rinse peas.
  • In a 4- or 4-1/2-quart slow cooker combine peas, the remaining 3 cups water, the quartered jalapeno peppers, sage, and salt. Top with meat.
  • Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.
  • If using low-heat setting, turn to high-heat setting. Stir squash into mixture in cooker. Cover and cook for 30 minutes more. Sprinkle each serving with red onion and cilantro. If desired, top with Lime Sour Cream and chopped jalapeno pepper. Makes 6 servings.
  • Lime Sour Cream: In a small bowl combine 1/2 cup light dairy sour cream, 1/2 teaspoon finely shredded lime peel, and 1 tablespoon lime juice. Cover and chill before serving.

  1. This was an interesting dish. We thought the flavor was good but could be improved on. After testing, we added a bit of hot sauce which enhanced the flavor. I think it would have been better if it didn't cook as long. The peas were quite mushy. We all agreed that if cooked less time and with the added hot sauce it could be a nice hearty dish. The lime sour cream, cilantro and red onion do add nice flavor. Made for Football week 2

I am also&nbsp;married to my best friend, Jeff and have been since April 2005.&nbsp; I love cooking, hate cleaning and will do whatever I can to get out of it!&nbsp;&nbsp;I&nbsp;love grilling and baking.&nbsp;&nbsp;I do most of the grilling at my house, and bake for almost a week straight at Christmas time!&nbsp; I can make or will attempt just about anything,&nbsp;though I rarely make&nbsp;brownies, my husband's are the best!&nbsp; Homemade breads are not my friend, so I am always working on bread baking.</strong></span></p> <p><span><strong>As for recipe ideas (besides zaar) Cooking Light Cookbooks are my favorites.&nbsp; I love to make new meals and try new things; it is hard though because my husband is picky when it comes to veggies (and hates seafood); If it were up to him we would have baked-bread crumb chicken and white rice at least one meal a day!&nbsp; Over the past couple years with zaar, I have found tons of new recipes&nbsp;my family&nbsp;normally wouldn&rsquo;t eat&nbsp;but have been happily surprised with new favorites.</strong></span></p> <p><span><strong>I&nbsp;love to join in&nbsp;all of the tag games; I haven't been as present as I would like, but as soon as my Jeff is back from working in Ohio I will be back in full tagging mode! </strong></span></p> <p><span><strong>Cooking is my hobby and passion, I always like to host the family get togethers and volunteer for the potluck dishes.&nbsp; Most of all though&nbsp;are my kids; being home all day with them is fun and challenging, but I wouldn&rsquo;t trade it for any salary!!</strong></span></p>
