Thai Grilled Chicken

"This is a delicious way to serve grilled chicken! It's perfect for those hot summer evenings when you want something light and easy. The chili sauce in the marinade is not too hot and even my children, who do not like spicy foods, love this chicken."

  • In a blender, combine cilantro, chili sauce, oyster sauce, soy sauce, garlic and sugar. Spread on chicken and marinate for at least 4 hours, preferably overnight. (In the refrigerator, of course!).
  • Pre-heat broiler or barbeque. Broil or grill chicken, skin side down, for 4 minutes. Turn and broil/grill 4 minutes longer until skin is crispy and chicken is cooked through.
  • Cut chicken on the bias into 1/2 inch strips.
  • Place lettuce leaves on a platter and arrange chicken on top. Garnish with cilantro, mint sprigs and green onions.
  • To eat in the traditional Thai manner, roll chicken in lettuce leaves along with herbs and onions. Dip into Thai Dipping Sauce (recipe # 188736).

  1. Excellent chicken! Great recipe for chicken breasts. Sambal oelek combined with soy sauce,oyster sauce and garlic - how could this not make for wonderfully flavored chicken. I love cilantro but need to introduce it slowly to family members so used parsley instead which worked very well. Had a few sprigs of cilantro on hand, I was very generous with the garnish on my serving! Next time around I am going to make your Recipe#188736 - sounds so perfect to serve with this Thai Grilled Chicken. Thank you J.Ko.

  3. This was great. I added a little frsh ginger and a little more cilantro to the marinade. Instead of broiling it, I baked it with the marinade and then topped with the green onions and cilantro. Great combination of flavors, and really easy. Thanks!

It's a joke between a friend and me ... a twist on J. Lo (singer/actress Jennifer Lopez) - not that I can sing or anything! I am a nurse by profession but I am currently an at-home Mom. I will be taking my nursing refresher course this winter (January 2008), so I will be combing through the 'Zaar files looking for good make-aheads and crockpot friendly meals. I don't have a particular favourite cookbook, other than the one I've compiled for myself. I do, however, enjoy looking through cookbooks for inspiration. I've taken many of my favourite recipes and saved them on disc; as I find more good "make agains" I add them to my collection. I have also found many excellent recipes here on 'Zaar. Thank-you, all, for your wonderful contributions! I enjoy Highland and Irish dancing, learning about new cultures, sewing, gardening, camping and, of course, cooking and baking! We have hosted young Korean students for the past few years and I have really acquired a taste for Korean cuisine. Most of it is quite spicy-hot, but, like many asian foods, there is a nice balance of other flavours (sweet, sour, salty) happening also. Try it sometime!
