  • In large bowl mix the butter, shortning, sugars and peanut butter.
  • Add eggs one at a time.
  • Blend flour, soda and salt then add to sugar mixture.
  • Then add oats.
  • Form into 1 1/2 inch balls (no need to press with fork like usual) These come out perfectly round Bake 350 degrees for 12 minutes.

  1. Yummy! Yummy! Yummy! We made this recipe with many modifications and it was still delicious! We did all butter, no shortening, decreased white sugar to 1/4 cup, used a combo of whole wheat and regular flour, added vanilla, chocolate chips and pecans. Beautiful cookies and most delicious. Also, very easy recipe. We'll be making this one often!
     
  2. Good cookies..i ground up 1 1/2 c oatmeal for the flour called for in recipe..just like them a bit healthier..these are super..i used all butter too.. made them with vanilla and without. Prefer the without.. more peanutbutter flavor.. love this recipe..thanks
     
  3. Peanut Butter lovers UNITE! My boyfriend is OBSESSED. First off I want to say this makes 40!! cookies with a scooper! and I cant imagine them being bigger than they are that way so 24 that would just be excessively large cookies. Next you can do a half batch and half everything to make a reasonable amount. Not a huge baking ordeal you know. When I made the 40 that was 4 cookie trays. Crazy. I added Vanilla extract. I as well added Reese's Peanut Butter Chips to send it above and beyond. I chill the dough 30min and changed bake time to about 15. I also took them to a family gathering and instead pressed the dough into a cake pan 9" it raises kind of like a brownie-blondie whatever and topped with icecream and caramel sauce. AMAZING I'm making them again tonight for the 3rd time.
     
  4. I have to agree, these are The Best Peanut Butter Oatmeal Cookies! I chose this recipe based on its high rating, and that it seemed to stand up to other's modifications with good results. After researching tips on substituting Coconut Oil for other fats (because I don't have any shortening), and oatmeal for flour in baking (it was suggested that 1/3 of the flour can be substituted with oatmeal). I used 1/2 c unsalted butter and 1/2 cup Coconut Oil, creaming that with the sugars before mixing in the Peanut Butter. I decreased the amount of flour to 1 cup, and only used a pinch of Kosher Salt (I don't have any regular table salt), and increased the oatmeal to 1 1/2 c. Using a measuring TBSP to scoop the dough, I baked the rolled balls on a foil lined sheet at 350 for 12 minutes, then allowed them to set for a couple minutes before playing. While the recipe suggests it makes 24 cookies, I made 5 Dozen, yes SIXTY cookies! With that being said, I think this would be a terrific recipe for any large function, holiday gifting, or bake sales. So simple and delicious!!

  5. These are the best cookies. They disappear very quickly. I reduced the sugar by a quarter cup and added 1/2 cup more oatmeal because they were too sweet for me. All I can say is YUMMY!!!

  1. Substituted Coconut Oil for Shortening Reduced salt Exchanged additional Oatmeal for 1/2 c of the flour
     
  2. I used coconut oil instead of shortening, almond butter instead of peanut and added dark chocolate chips and shredded unsweetened coconut. They are delicious - super chewy!
     
  3. Added Vanilla and Peanut Butter Chips. Chilled dough and increased bake time.
     
  4. Added bananas,vanilla flavoring to few and raisins. Used part of batter as a coffee cake.was great!
     
  5. I have made these cookies a couple of times now, I substitute coconut oil for the shortening and add 2 tsp of vanilla. 1/2 the batch had a handful of craisins, the other 1/2 had dark chocolate chips. Delicious!
