ingredients
- 1 cup hellman mayonnaise
- 2 tablespoons vinegar
- 1 1⁄2 teaspoons salt
- 1 teaspoon sugar
- 1⁄4 teaspoon pepper
- 4 cups cubed cooked potatoes (5 to 6 medium)
- 1 cup sliced celery
- 1⁄2 cup chopped onion
- 2 hard-boiled eggs, chopped
directions
- Combine the first 5 ingredients.
- Stir in remaining ingredients.
- Cover& chill.

I have been making this exact recipe for 25 years, we love it. Also, for 25 years I've reduced the salt to 1 tsp and sugar to 1/2 tsp. Usually I make this with apple cider vinegar or red wine vinegar~~today I made it with white balsamic vinegar. OMG, I wish I'd been making it with white balsamic for 25 years.

I have been making this recipe for over 50 years, have tasted a lot of other cook's potato salad, and I have to say, I've become a potato snob! Some cooks put green pepper in theirs (yuk!) Some put pickle in theirs (another yuk!) I know there are other types of potato salad, such as French, which is delicious as well, and of course German, etc. but this recipe is the best, and yes, you do need vinegar, or else it just won't taste the way good potato salad is meant to taste.

Hello! I love potato salad and usually don't eat everyone's, I hope I don't upset anyone but I don't get the vinegar, or sugar in the salad, and we don't put celery in our's My mother was from the South, we made our's with Hellman's mayonnaise, salt, pepper, onions, relish, hard boil eggs, she didn't put mustard but my daughter and I put a little mustard, and pickle juice. I do plan to try a little dill in my next batch.. Oh and I sprinkle paprika over the top of the salad. Okay let's hear it what do you think?

I don't think one should ever add ANY sugar and/or vinegar to this recipe. Excellent red (new) potatoes, fresh extra large hard boiled eggs, juicy sweet white onion and green celery with no strings attached, all seasoned with salt and freshly ground black pepper AND finished by stirring in to taste, Hellmann's mayonnaise, are all one needs to bring the "classic" taste of this fine potato salad to the folks one loves most! I've been doing it this way for 40 years or so, as my Mother and Grandmother have also, and I cannot tell you how many times I've shocked people by divulging the secret and simplicity of this recipe.

Of course most of our mothers made the best Potato Salad, and I make mine close to hers, it's close to The Original Potato Salad recipe, she didn't put any vinegar or sugar, but she varied between cutting up dill pickles or using some sweet pickle relish, depending on the Meat served. I on the other hand added in my time, because I migrated East from Texas to Alabama and had access to sweet Vidalia Onions, added some chopped to mine, and a Tablespoon of Yellow Mustard. It's not that Mom didn't love onions, she did, and Dad loved Green onions. But they tended to be strong back in the 60's and I think she had them on the side for visiting family. She did like that tiny jar of pimentos chopped in it, and a small handfull of curly parsley from her herb bed, freshly chopped. I love that too. I'll see if I can add a picture later when mine is done.
