  • 1 lb lean ground beef
  • 6 slices maple bacon
  • 1 (8 3/4 ounce) can corn (drained )
  • 1 cup chicken stock
  • 1 small sweet onion (diced)
  • 3 tablespoons of minced garlic (separated)
  • 4 tablespoons italian seasoning (separated)
  • 8 medium red potatoes
  • 2 tablespoons butter
  • 14 cup milk
  • 1 tablespoon celery salt

directions

  • Using scissors, cut up the bacon in 1/4 in x 1 in slices ( just an estimate), fry up in a medium skillet on low heat until slightly brown.
  • In a large skillet cook the ground beef and diced onion until the beef is no longer pink.
  • In a casserole dish combine the beef, bacon, corn, 2 tablespoons of garlic and 2 tablespoons of Italian seasoning until well mixed. Pour the stock over the top. Cover with tinfoil and bake at 350ºF for 30 minutes.
  • Meanwhile, cut up the potatoes in chunks ( leaving the skins on) and boil until tender, mash up with milk, butter, 2 tablespoons of Italian seasoning, celery salt and 1 tablespoon of garlic. When well blended and the 30 minutes is up, spread over the meat (leaving uneven for presentation).
  • Bake uncovered for an additional 20 minutes or until the potatoes get golden.

  1. This was excellent tasting! Did I miss adding a thickener to the broth? It was a little more watery than I remember Shepard's pie being. I will defiantly make it again.
