ingredients
- 1 lb lean ground beef
- 6 slices maple bacon
- 1 (8 3/4 ounce) can corn (drained )
- 1 cup chicken stock
- 1 small sweet onion (diced)
- 3 tablespoons of minced garlic (separated)
- 4 tablespoons italian seasoning (separated)
- 8 medium red potatoes
- 2 tablespoons butter
- 1⁄4 cup milk
- 1 tablespoon celery salt
directions
- Using scissors, cut up the bacon in 1/4 in x 1 in slices ( just an estimate), fry up in a medium skillet on low heat until slightly brown.
- In a large skillet cook the ground beef and diced onion until the beef is no longer pink.
- In a casserole dish combine the beef, bacon, corn, 2 tablespoons of garlic and 2 tablespoons of Italian seasoning until well mixed. Pour the stock over the top. Cover with tinfoil and bake at 350ºF for 30 minutes.
- Meanwhile, cut up the potatoes in chunks ( leaving the skins on) and boil until tender, mash up with milk, butter, 2 tablespoons of Italian seasoning, celery salt and 1 tablespoon of garlic. When well blended and the 30 minutes is up, spread over the meat (leaving uneven for presentation).
- Bake uncovered for an additional 20 minutes or until the potatoes get golden.
