"This is the most delicious salad - fresh and wonderful-tasting. FYI, lettuce can very much be a part of any greek salad - if you want it to. We like lettuce in my family and I often add it. It would not be 'authentic' in a Horiatiki (village) salad, but who cares?"

directions

  • Whisk dressing ingredients together until blended.
  • Season to taste.
  • Drain onion from ice water and pat dry with paper towels.
  • Combine all salad ingredients, except cheese, in large bowl.
  • Toss with dressing.
  • Sprinkle cheese over and serve.

I make this salad for a large group, like a church meal...I 3X or 4X the size, depending on how large the church meal group is...its upsizes nicely...Wash the lettuce...the head of the CDC said prebagged, pre washed lettuce is the #1 thing he would NOT buy and use as is from the grocery store...the more a produce is handled (triple washing) the more contaminated it can get...so I wash the lettuce in a large tub of salted water, then spin and bag into large gallon zip bags. I like a mix of romaines and iceberg...I marinate the roma tomatoes in olive oil (meyer lemon or orange blood), or orange zest, lemon zest and reg olive oil, sea salt or flavored salt and fresh pepper...toss the tomatoes at room temp and flip over 8-12 hours. I also marinate the cucumbers, slicing them on the mandoline side of a Microplane box grater. I cut the olives and the peppers in half, to make them go further for larger salad...its always well received...I wear gloves and assemble in large metal roasting pan, which can be tossed when finished.
     
  2. Excellent! Superb! I love this dressing and salad. I made as stated but increased the red wine vinegar to three tablespoons and added 1/2 teaspoon of sugar per other recipes I saw. Not too harsh and perfect for the salad. I used light feta in my version. If you are making a good sized salad it's a good idea to double the recipe so you have enough dressing. I'll use this recipe a lot, thanks for posting evelyn/athens!
     
  3. Fantastic.... My wife wants me to make this at least twice a week. Nice, healthy and easy to prepare..... However I always add a little bit of anchovies smashed up and incorporated into the dressing. ��
     
  4. I made this recipe as directed and it is scrumptious! The dressing is just right. I made an extra recipe of the dressing to marinate large cubes of chicken breast which we then grilled as kabobs and made the salad a meal. YUM
     
  5. The name of this recipe says it all as this is The Ultimate Greek Salad! This makes a nice large family salad that was enjoyed by all. I made one small change in that I cut the olive oil in half as my lettuce was still fairly moist from washing, other than that made as written. We thought the garlic and oregano were the perfectly proportion to the other ingredients and DH who quite often does not like the stronger flavored onions thought the soaking did a nice job taking the edge off. Thanks for the post.

  1. I'm with jeannette s.....adding mint gives it brightness and depth. I always use Cross & Blackwell's mint sauce on Greek salad. Makes it sing!

  3. I love these salads, BUT, several years ago a friend gave me a recipe for one almost like this, but it had Mint instead of the Oregano. Just the aroma was so wonderful. The mint and garlic together was amazing. Now I wonder if that is not closer to Mediterranean than Greek. I lost the recipe of course.<br/><br/>Also it was lemon juice and oil. No vinegar. Does anyone have that recipe? I would go close to dying for it.
     
  4. I could literally drink this salad dressing, it is so good. I did add about 1/2 teaspoon salt to it, and in the salad I used half baby spinach, and I substituted fresh mozzarella for the feta. I love feta, but had just run out.

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
