- 5 medium tomatoes, sliced in wedges
- 1⁄3 cup sliced onion
- 1 -2 tablespoon olive oil
- 2 leaves fresh basil, shredded
- salt & pepper
directions
- Combine all ingredients and chill salad an hour before serving for best taste.

Tomato lovers? You've got to try this! Outstanding as a side dish or as a topper for toasted breads or bagels. The flavor is so fresh, tastes just like summer! The oil seems to bring out the juices in the tomatoes and the salt and pepper, in it's simplicity, bring out that special tomato tang. Love this stuff!

Yes, I will agree w/ Chelle-I dated an Italian from Long Island and his Mama, Betty, was an EXCELLENT cook! This was one of the things she made that I LOVED...we usually ate it on top of hot bread (which she served with every meal). It was not meant to be forever with he and I, but his Mama taught me a lot about good cooking that lives on in my kitchen. If you have any of this left over, it tastes excellent in a biscuit. I will include my recipe on the 'Zaar! Look for "Tomato Salad Biscuits".

I had extra tomatoes in the garden so had decided to try this recipe even though it sounded deceptively plain. WOW!!! This was great! Flavor was excellent and went well with our grilled steaks we were having. I have been snacking on them since. Will be having this constantly in stock in my fridge. Thanks for a great recipe!!
