  1. Slice top off each tomato. Scoop out pulp and reserve.
  2. Spray skillet with cooking spray. Sauté vegetables and garlic until tender, about 10 minutes.
  3. Stir in reserved tomato pulp, herbs and cayenne; cook 5 minutes longer.
  4. Place tomatoes on a baking dish; fill with vegetable mixture. Sprinkle with cheese and bake at 350 for 10 minutes or until hot.
