  • Roast the sirloin for one hour at 350 degrees.
  • Baste with whiskey and wine and cook another hour, basting frequently.
  • Remove roast from oven, place on a serving dish, and cover with foil.
  • While the roast is sitting, add water to the juices to make one pint of liquid.
  • Bring to a simmer and add butter and flour; simmer 2-3 minutes.
  • Slice the roast and serve with gravy.

  1. Good recipe! I used top sirloin, as opposed sirloin tip, and Cdn Beef, as opposed Irish Beef, which would bring it down a lot, as Irish Beef is aged a lot longer. I used Jameson's Irish Whiskey, and when I do this again, will shift to Cognac, as mixing grain and grape sort of goes against my rules. Sadly, I used a local red wine, I'll know better next time and step that up to where it should have been. Gravy goes well with the meat, but less so with potato's (remember I "flawed" the basic recipe, so if you do it as puiblished you will certainly garner better results, and the meat results were very good.
     
  2. I have made this roast time and again. It is so easy to make and my husband loves the taste.
