ingredients
- 1 small onion
- 1 1⁄2 lbs ground turkey
- 1⁄4 ounce pork rind
- 1 teaspoon whole grain mustard
- 1 teaspoon cumin
- 1 teaspoon poultry seasoning
- 1 tablespoon olive oil
- 1 egg
directions
- Chop onion very fine. Crush pork rinds finely.
- Mix all ingredients well but quickly.
- Roll into golfball sized balls.
- Place on tray and bake until golden brown at 350 degrees.

Cooking has been a part of my life as long as I can remember. My mother was a chef during my childhood and I attended the Le Cordon Bleu before dropping out to work in various kitchens in New Orleans. I was head pastry chef in a cafe on Jackson Square before moving to the west coast for love.
