- 3 (15 ounce) cans cannellini beans
- 6 cups water
- 1⁄2 teaspoon salt
- 1 bay leaf
- 1 onion, chopped
- 3 carrots, chopped
- 6 garlic, minced
- 1⁄4 teaspoon black pepper
- 4 cups vegetable broth or 4 cups chicken broth
- 1 tablespoon minced fresh rosemary (can substitute 1/2 tablespoon dried rosemary)
- 3 links sweet Italian sausage, sliced (or can use 1/2 pound loose sweet Italian sausage rolled into meatballs)
- 1⁄4 cup pearl barley
directions
- Place one can of cannellini beans in the soup pot with the canned liquid and mash is potato masher or stick blender.
- Add the remaining beans, drained, to the pot.
- Add all the vegetables, barley, garlic, broth, water, bay leaf, rosemary, sausage, salt and pepper.
- Heat to a boil and then reduce heat to simmer. Simmer for 1 hour.
- Serve with crusty bread.
