Twice- Baked Potato Casserole

  • Preheat oven to 350 degrees. Lightly grease a shallow 2-quart baking dish.
  • Cook potatoes in a large pot with salted water to cover for 20 to 25 minutes, until tender when pierced. Drain well and return to pot. While potatoes are still hot, add butter and mash with a potato masher until smooth. Stir in 1 cup of cheese, milk, sour cream and eggs until blended. Then add 1/2 cup of scallions, 3 slices of bacon, crumbled; salt and pepper to taste.
  • Spoon into the prepared baking dish. Sprinkle with remaining cheese and 2 slices of bacon, crumbled.
  • Bake uncovered for 35-40 minutes or until the top is lightly golden brown. Sprinkle with remaining 1/4 cup of scallions and serve.

  1. Loved the recipe, but as written, not sure you should call this twice baked? Where's the twice baked? So, instead of boiling my potatoes... I baked them, then halved them, scooped them out, saving the skins. Casserole turned out delicious! So for appetizer,I simply added cheese and bacon bits to the scooped out skins, baked them till cheese melted, removed from oven, sprinkled with chopped scallions. No waste.
     
  2. This looks absolutely lovely. I wonder if a t spoon of dry mustard might be ok to add.
     
  3. This sounds terrific but for the better taste of baked potato I would bake the potatoes first unless you were needing to use up leftover potatoes.
     
  4. This was great! I'm a huge fan of twice baked potatoes anyway, the whole bacon/onion/cheese/sour cream really works for me, so making a casserole version really appealed! I am a true believer that bacon makes everything better and it was true of these potatoes too. There is something so comforting about a big plate of mash, especially when it's not just plain mash!

I only substituted chives for scallions, and doubled the recipe, adding a bit more milk (I used Hood Fat Free Smart Milk) and light sour cream, based on other reviewer comments. The eggs really made this recipe special, I think, adding a subtle richness, and a puffiness to the casserole that was very festive on our Christmas table. The taste was out of this world - rich and satisfying, without being overwhelming or too fussy. Everyone loved it, and has requested that it make an appearance for other get-togethers. I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
