  • Spread potatoes in greased shallow casserole dish.
  • Top with sour cream, cheese, bacon and onions.
  • Casserole may be covered and refrigerated up to 24 hours, if desired.
  • Bake uncovered in 350°F oven for 30 minutes or until hot.

  1. Had this for supper tonight very good. Made it with instant potatoes. I didn't have any sour cream so I added extra butter. Mixed half the ingredients (except the bacon) right into the potatoes. I spooned this into individual oven prove cups then topped with the other half of ingredients (not the bacon just yet). I also sprinkled this with some parsley flakes and some paprika for color. Five minutes before it was done I sprinkled it with the bacon and some more butter. YUM!

  3. I made this for a few of my DPs single military friends. Being overseas they don't get home cooking very often so I like to feed them every now and again. They all LOVED this! with 4 of us eating the lot of it was finished up and I've been asked to make a double recipe for lunch at the shop soon! This really does take like twiced baked potatos just much easier!!
     
  4. These are great! It really does taste like a twice baked potato, but so easy. We had this o n the 4th of July for our barbeque and it was gone, everyone loved it! I did us instant mashed potatoes because that is what I had on hand, so I doctored them up with extra butter, some cream and salt and pepper. Thanks for sharing, I will make this all the time!
     
  5. We really like this. It tastes like party potatoes, but without all the fuss. I was in a hurry, so I diced up some potatoes that had already been baked. I used Real Bacon bits instead of cooking and crumbling bacon slices. The only change I would make is that I would salt and pepper the potatoes before topping with the other ingredients. Thanks!

Tweaks

  1. I made this for our Thanksgiving dinner and it worked out really well. I increased the recipe to accomodate a large group. Other than this, the only change I made was to substitute yogurt cheese for the sour cream, which worked beautifully as well. I particularly liked the ability to partially make it in advance since I was cooking almost the entire meal myself for potentially 24 people. It went over extremely well and what little was left reheated well (some in the microwave and some in the oven). Thanks for sharing this recipe Tonkcats!!!
