Tzatziki Sauce

- 2 cups plain Greek yogurt (definitely Greek Yogurt)
- 1 big cucumber
- 1 red onion (not Yellow, but white will be tolerated)
- 4 minced garlic cloves
- 1 tablespoon dill
- 1⁄4 cup lemon juice
- 1 teaspoon of cracked peppercorn (go black with this one, green and red...not so good)
directions
- Peel and chop the cucumber, set the cucumber in a strainer and let the juice drip off of it. (don't have to wait too long, but longer the better).
- Put the Yogurt in a fine wire strainer that will hold the yogurt without it dripping through, and let the moisture drain off. If you don't have a strainer you can just let it go, it just won't be as thick.
- Chop the onion, and the garlic up into small piece (smaller the better).
- Mix the yogurt, chopped cucumber, onions, and garlic into a glass or metal bowl (not plastic! You wanna taste the plastic in your sauce?).
- Now taste it, and add pepper, dill, and lemon juice, and mix it up! Depending on your tastes you may want to keep adding pepper, dill, and lemon juice to your liking.
- It should be ready in about an hour. But! It is 10 times better if you let it sit covered over night in the fridge! Well, that is it you made Tzatziki sauce, super easy isn't it! Enjoy!

Not sure what I was letting myself in for, I did cut the recipe in half, but otherwise followed it right on down! Served it with some baked chicken breast, along with new potatoes & peas, & it was a big hit with my other half, but then he likes 'creamy' anything it seems, which means I'll be keeping this recipe around!
