Ultimate Potato Soup

  • In a dutch oven cook bacon till soft/ crisp, remove from pan and set aside.
  • Drain off fat except for 1/4 of a cup and cook onion and celery till onion is translucent.
  • Add garlic and cook for 1-2 minutes add potatoes and toss to coat.
  • Sauté for 4-5 minutes.
  • Add bacon and cover with enough stock to just cover potatoes.
  • Cover and simmer till potatoes are tender.
  • In separate pan melt margarine and cook with flour for 1-2 minutes. Add cream, tarragon and cilantro and bring mixture to a boil to thicken, stirring constantly.
  • Add cream mixture to potato mixture, heating through.
  • Puree about 1/2 the soup and return to pot.
  • Season to taste and serve.

  1. I've tried this soup before and think that it is great! I omited the tarragon in mine(I just am not found of this spice in soup or stews). Great recipe for a cold winter night- I also added some chopped green onions on top before serving!

  3. My grandmother makes one like this, almost exactly. I hate potatoes and even I like it. Thankyou for posting your recept because she never writes any thing dow or measures.

  5. This soup was delicious,thick and creamy.Not for the weight concious however....but sometimes you have to splurge.I served it with my Sour Cream Dill Bread and the meal was a hit!

Tweaks

  1. I make this soup all the time. I have made a few changes to the recipe over the years. I leave out the bacon and just sauté the onions and celery in a few tablespoons of butter. Also I replace the tarragon with an equal amount of dill instead. This works great as dill is a natural accompaniment to potatoes and I don't usually have tarragon on hand.
     
  2. This was a great soup! I added some broccoli, parsley, 2 more garlic cloves and cheddar, omitted the tarragon and used whole milk instead of some of the broth and heavy cream. I didn't get quite the thickness I wanted (I think I added more broth than I needed) so I added a bit of mashed potato flakes.
     
  3. Oh yeah! This is a gooood one! The bacon and the drippings make it so tasty. I made a double batch but was short a few potatoes, so I used a bit of instant mashed flakes to thicken it up, and that worked like a treat! I will probably try this with sour cream instead of the cream next time... Thanks for a great soup!

I am 29 years old, married to a great guy, have no kids but a dog and a cat. That,s enough for me!!!! I presently work at a cabinet shop, but am planning on going to school this coming fall or winter for the culinary arts course.
