Uncommon Ramen BBQ Chicken Pizza Bake

1 12-inch pizza or two 9-inch pizzas

- 6 ounces ramen noodles, any flavor
- 1 egg, beaten
- 1⁄4 cup parmesan cheese, finely grated
- 2 tablespoons vegetable oil
- 2⁄3 cup barbecue sauce
- 1 cup cooked chicken, chopped into 1/2 inch chunks
- 1 cup mozzarella cheese, shredded
- 1⁄2 red onion, thinly sliced
- 5 ounces canned mandarin orange segments, drained well

- pitted black olives
- mushroom, sliced
- canned jalapeno slices
- bell pepper, seeded and thinly sliced
- red pepper flakes

Directions:
- Remove ramen noodles from their packages and cook in boiling water until just al dente (1-2 minutes). Save the flavour packets for another use.
- In a large bowl, beat the egg and parmesan cheese.
- Drain the noodles very well and add to the large bowl, mixing quickly to combine.
- Preheat the oven to 450 degrees F.
- Heat a 12-inch cast-iron skillet over a medium heat until hot. Once hot, add the vegetable oil and tilt the pan to coat the base and sides with it. Add the noodles to the skillet, using a fork to help you spread them out to cover the base in an even layer. Press down using a metal spatula to compact it down. Cook over a medium-low heat until golden and slightly crisp underneath.
- Spread the BBQ sauce over the noodles, scatter on the chicken and mozzarella. Top with the onions and mandarin segments. Add any of the optional toppings now too.
- Bake for 10-15 minutes until the cheese has melted and is starting to brown.
- Remove from the oven and use a metal spatula to help loosen the pizza from the skillet. Slide out into a cutting board, cut into wedges and serve.
- Note: you can also make two 9-inch pizzas from this recipe. The crust will be slightly thinner. Just use a 9-inch skillet instead of a 12-inch and only use half the cooked noodle mixture for each pizza base.
- Note: The 1/2 cup of milk in the crust has been removed from the recipe to help ensure a crisp crust throughout. Additionally, if you don’t have a cast-iron skillet, you can baked this on a cookie sheet, but the crust will not be as crisp.

Making this in a cast iron skillet helped the base get nice and crispy which meant it held together really well. The ‘pizza’ was incredibly quick to assemble since there’s no yeast involved, which I loved. If you don’t like fruit on your pizza, feel free to leave the mandarin oranges off - it’d be great without too. I could see using the ramen base to make loads of different pizza variations in the future - great idea!

I think the idea for this is really promising. We were pretty divided on this as written though. IMHO the mandarin oranges & Sweet Baby Ray's did not compliment each other at all & I would avoid the oranges in the future & I did notice DH picking them off after the first bite. DS didn't like the red pepper (option) with the BBQ sauce & none of us liked the mushy noodles in the middle. I shredded my chicken instead of cubing it & we just ate the "pizza" with a fork. In the future I may try it again & make individual pizzas so the mushy center noodles will be reduced in proportion and we can all top our own the way we'd like to. Thanks for sharing your creation! Made for the Fall 08 Dining on a Dollar - Ramen Noodle challenge. UPDATE 2/13/2009: I have been wanting to make this again based on my theory that smaller individual pizzas would be much better. When I looked up the recipe this morning I saw that it had been revamped so I made it as written again. I did make sure to drain the oranges and noodles for about 10 minutes each. I also spread the noodles out over the entire pizza stone & just thick enough to cover the stone. Because we didn't like the oranges last time, I only covered half the pizza with them to see if they improved with the green pepper & olive options. Everything went over really well this time except we still ended up picking off the oranges. DH was very pleased with the combination of BBQ (Seet Baby Ray's again), chicken & the noodles. He really thougt the BBQ tied those two together quite well. My camera was out of battery last time but I got some good photos tonight. Thanks again, Hope!

I really liked this dish quite a bit! I was really shocked that the flavors tasted really great with Ramen. I used cheddar cheese instead of mozzarella. The white mozzarella might look a bit better with this dish though. I didn't use any of the optional toppings. I really liked the oranges. I'm not sure if it's really "pizza," though. But it was a great lunch for me. I will be making this one again. Also it was very simple to make and that's always a plus. Thank you so much! Good luck on the contest! This was a very interesting idea. Although it is more like a pizza pasta and not like a normal pizza. The center was very soft and I even cooked it an additional 10 minutes trying to harden it up like the edges came out. The overall flavor was good but I would not use the oranges. The only change I made was to use Walla Walla sweet onions instead of the red. Made for dining on a $ contest.
