  • Place all ingredients, except lemon juice, in a large stainless pot. Bring to a boil then simmer for 30 minutes-all veg should be soft.
  • Press veg through a fine sieve or food mill.
  • Return juice to pot, stir in lemon juice and bring to a boil.
  • Pour into clean hot jars, leaving 1/2 inch head space. Process for 35 minutes at altitudes up to 1000 feet.

  1. The recipe says 1/2 c lemon juice, do I still need to add lemon juice to each jar or is that enough in the batch. What about salt? Thank you.

  2. The original V-8 counts tomatoes as a veggie-and they dont have 8 either. Get a life, or a reasonable facsimile of one.
     
  3. How can you call this "V-8" when there are only 4 veggies (at the most - 3 if you count tomatoes as a fruit) in the ingredients?
     
  4. Thanks for a tasty recipe,we had lots of everthing in the garden,we made 45 quarts of juice.We shared some and now we,ll have enough until next year.My husband adds a drop of tabasco in his glass.
     
  5. The store bought V-8 does indeed have 8, tomatoes, carrots, celery, beets, parsley, lettuce, watercress and spinach. However, you should be able to get the same taste without all of them. Watercress and lettuce have very little flavor, so I doubt you'll notice they are missing, or add them if you're that adamant about having 8. The original has beets, but a very, very small amount. I suppose you could add it and maybe leave out the horseradish to compensate, not sure. Spinach also is in very small amounts for the original. You can adjust recipe as preferred or depending on what you have on hand. Experiment, taste, and tweak to your personal preference. If you want it to be the EXACT same as the original, go to the store and buy it from Campbell's soup company. If you want to make your own, this recipe is a the very least a great place to start.
