Vanilla Sugar

"Really good way to keep a quart or two of sugar, buy lots of beans at Christmas or online, where they can be had for a reasonable price, sometimes they are available at Costco during the winter months. When the sugar starts running low, or below half, add more, stir and keep again. It will never go away. If you want to, the sugar can be ground with the vanilla and sifted before storing, and it's great that way too, but don't use as much of it."

  • Mix vanilla and sugar in a bowl. Transfer to a covered container, using a piece of parchment, if desired.
  • Store airtight for several days before using. Replenish as needed.
  • Previously spent vanilla beans are also fine to use as long as they have been dried out on paper towels for about a day, it is also OK if the bean has been scraped of its seeds.
