  1. rinse and sort beans.
  2. Soak beans (Cook's Preference).
  3. Drain and Rinse beans.
  4. In a stock pot put in the 8 cups of vegetable stock, beans, cumin and chili powder. Bring to a boil and reduce to a low simmer. Cook the beans for 45 to 60 minutes.
  5. When the beans are almost done cooking, start sauteing the onions, garlic and celery using the olive oil. Saute until the onions are translucent and not burnt.
  6. Add the onions, garlic and celery to the pot.
  7. Dice up the tomatoes and add to the pot.
  8. add your optional ingredience.
  9. cook for about another 15 to 20 minutes.
  10. using a blender, blend the soup until it is the consistance you like.
